Ingredients
1 1/4 cups whole grain white flour
1/2 cup egg substitute
1/2 cup applesauce
1 cup evaporated skim milk
1 tsp salt
3/4 yellow corn meal
2 tsps baking powder

Directions
Mix dry ingredients in mixing bowl.
Make a well in the center and add wet ingredients. Mix until just combined.
Pour into greased 8x8" pan.
Bake at 400 °F (205 °C) for 20 - 25 minutes.
Cut into 9 pieces.
 

Black Bean Chocolate Brownies

A lightened up version of a dessert classic.

Ingredients
2 sprays cooking spray
1/2 cup black beans
1/4 mug coffee
1/2 cup butter, unsalted
4 squares baking chocolate
4 large eggs
1 1/4 cups sugar
1 tsp vanilla
0.12 tsp salt
1 cup flour

Directions
Pre-heat oven to 350 °F (175 °C). Coat 9x13" pay with cooking spray; line with aluminum foil and coat foil with cooking spray.
In a blender or mini food processor, process beans with coffee until smooth; Set aside.
In a double boiler over very low heat, melt butter and chocolate (can also be done in a microwave).
Meanwhile, in a medium bowl, using an electric mixer, beat eggs and sugar until light and fluffy. With mixer on low speed, add melted chocolate to eggs; incorporate well.
Add black bean mixture, vanilla and salt. Mix well. Add flour; combine thoroughly on low speed.
Pour batter into prepared pan and bake until a tester inserted in the centre of the brownies comes out clean, about 25 - 30 minutes. Remove pan to a cooling rack.
After 10 minutes, remove brownies from pan by pulling up on the foil and placing brownies on the cooling rack to cool more.
Cut into 24 pieces and serve.
 

New York Cheesecake

A delicious low carb version of a thick cheesecake.
 

Ingredients
24 oz cream cheese
5 medium eggs
16 oz sour cream
2 tsps pure vanilla extract
30-48 drops liquid stevia

Directions
Grease a deep dish springform pan, or a deep dish pie pan and set aside.
Beat the cream cheese on lowest setting for 5 minutes. Add the Stevia and vanilla flavoring and beat lightly. Add 1 egg at a time and beat lightly, repeat for all eggs one at a time. Next, add the sour cream and beat well.
Pour mix into pan.
Bake at 325 °F (160 °C) for 55 minutes. Start checking at 45 minutes. If it's getting brown, turn the oven off.
When the time is up, prop open the oven door, turn off oven and leave the cheesecake in the oven for another hour.
After 1 hour, remove from the oven and allow to cool completely. Chill 12-24 hours before serving. The longer you can chill the firmer it will set.
Note: for a dark, glass or nonstick pan bake at 300 °F (150 °C).

Strawberry Angel Food Cake

Ingredients
1 angel food cake
16 oz fat free cream cheese
6 oz sweetener
8 oz low fat frozen whipped topping
24 oz strawberries
12 oz strawberry jelly

Directions
Cut up angel food cake and cover the bottom of a dish or pan (make sure it is deep enough for all ingredients).
In a medium bowl, beat cream cheese and sweetener (like Splenda) together until light and fluffy. Fold in whipped topping (like Cool Whip).
Mash the cake down with your hands and spread the cream cheese mixture over the cake.
Slice strawberries (an egg slicer works great).
In a bowl, beat the strawberry jelly preserves until smooth.
Mix sliced strawberries into the preserves, then spread over cream cheese layer.
Keep chilled until served.

Lemon-Lime Meringue Sandwich Cookies

Ingredients
1 packet fat and sugar free lemon pudding
2 cups warm water
1/2 cup sweetened condensed milk
juice of half a lime
1/2 cup powdered sugar
1 tsp vanilla extract
1/4 tsp cream of tartar
1 1/2 oz egg white powder

Directions
Preheat oven to 350 °F (175 °C) and line baking tray with parchment paper.
Whisk together lemon pudding, condensed milk, 1 1/2 cups warm water and lime juice. Put in fridge.
In a large mixing bowl add remaining warm water and powdered egg whites, break up lightly with a fork and let sit 2 minutes.
Mix with beaters on medium speed until egg white powder is dissolved. Add vanilla extract and cream of tartar.
At high speed add powdered sugar until soft peaks form.
Use pastry bag or spoon meringue about 2-2 1/2" size cookies onto baking tray. Bake for 12-15 minutes.
Remove from oven and cool 5 minutes. Sandwich 1 tablespoon of filling between 2 cookies.
Note: can be made ahead of time by keeping filling and meringue cookies separate until ready to eat.

Banana Bread Muffins With Chocolate Chips

2 1/2 oz vegetable shortening
1/2 cup sugar

Directions

Directions

Add eggs one at a time and mix well.
Add the dry ingredients and mix well.
Add the cheese and mix. Scoop into muffin pan.
Bake for 15 minutes.

Egg Muffins With Turkey Sausage

12 large eggs

1 5" long sweet potato

Directions
Crack eggs into large bowl and beat. Set aside.
Cook sausage until done.
Shred sweet potato into "hash browns" and saute with spinach.
Add cooked sausage, sweet potato, spinach, salt and pepper to bowl with beaten eggs and mix well.
Scoop mixture into greased muffin pan filling cups 3/4 full. Cook until eggs are completely done, approximately 20 minutes.

Apple Strudel

Ingredients
2 1/2 cups flour, sifted
1/4 tsp salt
1 oz margarine
1/3 cup water
1 tbsp vinegar

4 medium tart apples, peeled and sliced
1/2 cup sugar
1/4 tsp cinnamon
1/4 cup sultanas or raisins
1/4 cup chopped walnuts

Directions
To make the pastry, blend flour and salt in a large bowl.
Add margarine and cut through with a knife to blend.
Add water and vinegar and knead to form dough.
Divide dough in half and roll out each half until very thin.
To make the filling mix all ingredients together.
Preheat oven to 350 °F (175 °C). Cover each rectangle of dough with filling, roll up.
Place on baking sheet with dough joint facing down.
Brush with glaze and bake 45 minutes until golden.

Chocolate Chip Scones

1 3/4 cups flour
1/3 serving packet sugar
2 tsps baking powder
1/2 tsp salt

Directions
Whisk together flour, sugar, baking powder and salt. Cut in butter.
Stir in orange juice and chocolate chips.
Roll into a 9" circle (approx. 1/2" thick). Then cut into about 10 triangles.
Place on greased baking sheet. Bake at 400° F (200° C) for approximately 12 minutes.
Note: instead of using chocolate chips and orange juice, you could make them plain or with raisins and apple juice, or cranberries and orange juice.

Pumpkin Gingerbread

1/2 cup skim milk
1 tbsp vinegar
1 cup light cream
1 cup raisins
1 tbsp unsifted icing sugar
1 cup packed brown sugar

Directions
In large mixing bowl, combine flour, salt, baking soda and spices.
In separate bowl, cream butter, margarine and brown sugar. Blend in eggs one at a time, followed by molasses.
In 2-cup measure, add vinegar, skim milk and cream. Total volume of liquid should be 1 1/3 cups. (You can adjust amounts of cream and skim milk according to your preference.)
Add dry ingredients (in three portions) alternately with liquid ingredients (in two portions) to creamed mixture, incorporating well after each addition.
Fold in raisins, if desired.
Turn batter into prepared 9x13" pan.
Bake at 350 °F (175 °C) for 45 to 55 minutes, or until center of cake tests done.
Remove from oven and allow to cool slightly. Using a sieve, sprinkle icing sugar over top of cake before cutting into squares.

Sour Cream Cheesecake

Ingredients
16 oz cream cheese
1 cup sour cream
1/2 cup sugar
2 jumbo eggs
1 tsp vanilla

Directions
Soften cream cheese, add 1/2 cup sour cream (reserve rest for later) blend all other ingredients together.
Bake in 325° F (160° C) oven for 50 minutes.
Blend 1/2 cup sour cream with a tablespoon of granulated sugar and 1 teaspoon of vanilla. Top cheesecake with this mixture and put back in oven for 10 minutes.
Cool on rack for 2-3 hours, refrigerate after the cooling off period.

Banana Oatmeal Cookies

Ingredients
1/2 cup flour
1 cup dry oatmeal
2 small bananas

1/2 cup walnuts, chopped
1 dash salt

Directions
Preheat oven to 390 °F (200 °C).
Combine all the dry elements together, flour, oatmeal, cinnamon, pinch of salt and baking soda.
In another bowl mix the butter with the sugar and add the egg.
Squash the bananas and mix them with the egg and sugar.
Add the walnuts to the dry bowl and mix everything together.
Dispose the cookie dough on a cooking sheet and put in the oven for 7 minutes, lowering the heat.
Let cool and enjoy.

Vanilla Cake

1 1/2 tsps baking powder
3/4 tsp salt

Directions
Preheat oven to 350 °F (175 °C). Spray cake pan with nonstick spray, set aside.
In a medium bowl, whisk together flour, baking powder, and salt.
In a large mixing bowl, cream together butter and sugar until light and fluffy. Add eggs, one at a time, mixing until incorporated. Scrape down sides of bowl, and beat in vanilla.
Add flour mixture and milk alternately, beginning and ending with flour. Scrape down sides and bottom of bowl.
Pour carefully into pan. Bake until top springs back when touched, about 20 minutes, rotating pan once if needed.
Transfer to a wire rack, let cool for 5 minutes. Remove cake from pan, and let cool completely on wire rack.
