Marinated Olives, Red Pepper And Artichoke Hearts

1/2 cup olive oil
3 tbsp red wine vinegar
2 tbsps basil, chopped
1 tbsp parsley fresh & chopped
1 1/2 tsp minced garlic
1 tsp Dijon mustard
9 oz frozen artichoke hearts
1 large red bell pepper
4 oz mushrooms
1 small onion
15 kalamata olives
3/4 cup sliced black olives

Cut red pepper into match stick size strips.
Thaw and drain artichoke hearts. Cut lengthwise.
Trim and quarter mushrooms. Chop olives (use pitted olives).
Whisk first 6 ingredients in large bowl to blend.
Add vegetables and olives. Toss to coat. Season with salt and pepper.
Cover and refrigerate at least 2 hours, stirring occasionally. Let stand at room temperature 30 minutes before serving.
Note: this can be made 1 day ahead if kept refrigerated.

Vegetable & Cheese Frittata

Frittata with tomatoes, onion, peppers and cheddar.

8 large eggs
1/2 cup chopped onion
1/2 cup chopped green pepper
1 can canned tomato
1/2 cup shredded cheddar cheese

Add onions to a pan over medium heat with 2 tablespoons of water.
Cover and steam onions until soft and water has evaporated.
Add green pepper and brown lightly, adding salt and pepper to taste.
Add can of drained tomatoes.
Scramble the eggs in a bowl and add them to the pan. Remove pan from heat.
Wrap aluminum foil around the handle of your pan (if not oven-safe) and place the pan in a 350 °F (175 °C) oven for 25 minutes, or until egg is cooked through.
Slice and serve.

Bacon Wrapped Jalapeno Pepper Poppers

6 jalapenos
4 oz cream cheese
4 oz cheddar cheese, shredded
6 medium slices bacon, cut in 1/2

Cut stems off of peppers and cut them all in half longways. Remove the seeds and membranes from peppers.
Mix cheddar cheese with cream cheese. Fill each pepper with the cream cheese mixture.
Wrap 1/2 slice bacon around each pepper half. Place on a foiled (cooking spray such as Pam) lined baking sheet.
Place in a 450° F (230° C). oven for 10-15 minutes or until bacon is fully cooked.
Remove and serve when cool enough to safely eat.

Bacon Wrapped Meatballs

6 thick bacon slices
1 medium egg
1/4 cup shredded colby jack cheese
2 tsps garlic powder

5 medium slices bacon
1 small onion
15 medium mushrooms

Preheat oven to 350 °F (175 °C).
Take the stems out of mushrooms, reserving 4 of the stems. Clean mushrooms, set aside.
Chop onion and reserved stems.
Fry bacon until crisp, reserving grease.
Cook onion and stems in grease until tender.
Crumble bacon into soft cream cheese.
Scoop some of mixture into each mushroom cap.

1/2 cup butter
1 cup parmesan cheese, grated

2 cups vegetarian refried beans
2 avocados
12 oz light sour cream
4 oz light mayonnaise
3 tbsp taco seasoning
1/2 fl oz lime juice
1/4 tsp garlic salt
3/4 cup shredded Mexican blend cheese
1/2 cup chopped or sliced red tomatoes
3/4 cup diced tomatoes
1/2 cup sliced black olives
2 stalks green onion

Combine sour cream, mayonnaise and taco seasoning in small bowl.
In another small bowl remove flesh from avocados and mash, then add lime juice and garlic salt.
In a 13 x 9" serving pan or two 8" round pans evenly spread refried beans, I use the back of a large spoon.
Spread avocado mixture on top of refried beans layer.
Spread seasoning mixture on top of avocado layer.
Sprinkle shredded cheese to cover top of seasoning layer, top with diced tomatoes, sliced olives and sliced green onions.
Serve with tortilla chips, use lime flavored tortilla chips for an even bigger hit!

Chocolate & Nut Dipped Strawberries

24 large strawberries
8 oz chocolate
3/4 cup, slivered almonds

Place chocolate in double boiler over barely simmering water.

1 cup brown rice
0.12 cup spicy tomatoes
1 tsp salt

Stuffed Mushrooms

18 medium mushrooms
1/4 cup chopped red onion
1 clove garlic, chopped
1/4 tsp leaves basil
2 tbsps olive oil
1/2 cup parmesan cheese, grated
1/2 tsp salt
1/4 tsp pepper
1 large egg

Clean the mushrooms. Remove the stems and set aside.
Spread the olive oil in a small glass baking pan. Place the mushroom caps evenly in the pan, rolling them in the olive oil so they are lightly coated, bottom side up. Sprinkle lightly with salt.
Chop the stems really fine and place them in a bowl. Chop the onion and garlic, add to stems.
Add the egg and spices, mix together. Add enough parmesan cheese so that the mushroom stem mixture isn't too runny. Add more if desired.
Fill the caps with the mushroom/cheese mixture and bake on 350 °F (175 °C) for 15-20 minutes.
Let cool 10 minutes before serving.

Crab Cakes

1/4 cup bread crumbs
1 tsp baking powder
1 tbsp dried parsley
1 tsp yellow mustard
0.12 tbsp black pepper
2 tsp seafood seasoning mix
1 tbsp light mayonnaise
2 tbsps butter
1 tbsp Worcestershire sauce
3/4 cup cholesterol-free egg product
16 oz canned blue crab

Pre-heat oven to 375 °F (190 °C). Grease a baking sheet.
Combine bread crumbs, baking powder, parsley, mustard powder, pepper, and seafood seasoning; set aside.
Stir together mayonnaise, butter, Worcestershire and egg product until smooth.
Fold in crab meat, then fold in bread crumb mixture until well blended.
Shape mixture into 12 crab cakes, about 3/4" thick, and place onto prepared baking sheet.
Bake in preheated oven for 15 minutes, then turn the crab cakes over, and bake an additional 10 to 15 minutes, until nicely browned.

Egg Rolls

1 lb pork
2 cups shredded cabbage
1 cup bean sprouts
1 cup shredded carrots
24 egg roll wrappers
1 tbsp sesame seed oil
1 tsp ginger, minced
1 tbsp fish sauce

Preheat oven to 425 °F (210 °C). Brown pork and ginger until light brown.
Add shredded carrots, cabbage, and bean sprouts to pork mixture. Mix together. Add fish sauce and let mixture cool.
Fill egg roll wrappers with 1 to 2 tbsp of mixture and roll. Place on baking sheet and lightly brush egg rolls with sesame oil.
Cook for 6 minutes then turn to cook for additional 6 minutes. Do not over-brown.

Cinnamon Raisin Roll-Ups

A recipe I found in a kids cook book and made for my daughter, and ended up liking it for lunch.

4 oz low fat cream cheese, softened
1/2 cup grated carrot
1/4 cup golden raisins
1 tbsp honey
1 tsp cinnamon, ground
4 flour tortillas
1/2 cup slices apple (8 thin wedges)

Combine cream cheese, carrot, raisins, honey and cinnamon in small bowl; mix well.
Spread tortillas evenly with cream cheese mixture, leaving 1/2" border around edge of each tortilla.
Place 2 apple wedges down center of each tortilla; roll up.
Wrap in plastic wrap. Refrigerate until ready to serve.
